This Classic beef chili has become a family favorite for us. It is full of flavor. This recipe uses our Mexican spice blend, scallions, and garlic to give it that pop! You can also add a Poblano pepper to give it a little or a lot of heat.
This 30 minute classic beef chili is also made in one pot! Which makes clean up so much easier. With this chili only taking around 30 minutes to make this becomes a favorite for all the busy moms and dads out there. If you are not in a rush, let the chili simmer longer. It will just get better! The extra cook time will just intensify all those chili spices and flavors. If you like it hot.. break out the hot sauce.
Remember to add your sour cream, cheddar cheese and scallion greens to your bowl for optional toppings. We also enjoy a nice peanut butter sandwich with ours. Nothing feels the heart with warmth more than a bowl of classic beef chili, cheese and a peanut butter sandwich. Reminds me of my childhood.
You can also add a twist to this chili and pour it over a bed of tortilla chips and make your own nachos.
I also like to double this recipe and freeze some. I use these fresh meal prep containers from Amazon. They are not expensive and make a great container for freezing.

This Classic Beef Chili is a family favorite for that cold winter day or even just a family Sunday funday.
Ingredients
1 ½ lbs. Lean Ground Beef
4 Cloves Garlic
4 Scallions
2 cans Cannellini Beans, drained
2 tablespoon Mexican Spice Blend
2 chicken or Veggie Stock Concentrate
2 Cans Crushed Tomatoes
Salt and Pepper to taste
Optional: 2 Problano pepper
Optional Toppings: Cheddar Cheese and Sour Cream
Instructions
Prep - Slice scallions separating greens and whites. Core and seed poblano and chop. Drain and rinse beans.
Drizzle oil in a large pan, add beef and cook until browned and no longer pink. Season with salt and pepper. Remove from pan and set aside, draining any excess grease.
Add scallion whites, poblano and garlic to the same pan used for beef. Cook until lightly browned. Approximately 5 minutes.
Add stock concentrate, beef, beans, tomatoes and 1 cup of water. Bring to a boil. Let simmer until thick, about 10 minutes.
Season with Salt and Pepper to taste.
