This slow cooker ( Crock Pot ) Cilantro lime Chicken is delicious. It is very easy to make and when finished the options are endless. I like to make chicken street tacos. You can also put Cilantro Lime Vinaigrette on these for even more of a flavor explosion. I just can't help it, I love love love these flavors. I think I could eat them every day.
These are not only delicious, they are easy to make. Add chicken to crockpot fresh or frozen. Combined chicken broth, olive oil, salt, pepper, paprika, cumin, and garlic. Pour over chicken. Cover and cook on low for 8 hours.
Once done, remove chicken and place in a large bowl. Use two forks to shred chicken and return to pot to mix with the liquid. Add Cilantro.
How to make cilantro lime chicken in the Instant Pot
You can also make this in your Instant Pot with fresh or frozen chicken. Here I used frozen chicken.
Combined the chicken broth, olive oil, salt, pepper, paprika, cumin, and garlic. Add chicken to the instant pot and pour liquids over. Close the lid and set it to manual 15 minutes. Let it naturally release.
Once all pressure has been released, remove chicken and place in a large bowl. Use two forks to shred chicken and return to pot and mix with liquid. At this point, you can add Cilantro.

- 1/2 c chicken broth
- 1/4 c olive oil
- 1/4 c lime juice
- 1/4 tsp Garlic
- 1/4 tsp sea or kosher salt
- 1 tsp cumin
- 1/4 tsp paprika
- 1/4 tsp cracked black pepper
- 2 lb. boneless skinless chicken breasts or tenderloin
- 1/2 c chopped cilantro
- Whisk together the chicken broth, olive oil, lime juice, garlic, salt, cumin, paprika, and pepper.
- Place the chicken in the crock pot. Pour the sauce over the chicken.
- Cover and cook on low for 8 hours for best results (or high for 4 hours).
- Using two forks, shred the chicken.
- Add the cilantro to the chicken and toss.
You can also make this in your Instant Pot. Cook on Manual for 15 minutes. Let it naturally release for 10 minutes then you can manually release.
