- 1 c cubed celery
- 1 c slice onion
- 1 1/2 lbs chopped carrots
- Salt and Pepper to taste
- 1 c veg or chicken stock
Release pressure using the natural release method.
Use an Immersion blender to puree the soup in the pot or cool the mixture slightly and pour into a blender. Puree until smooth. Work in batches if necessary
If serving the soup hot, you may want to reheat it, stirring frequently. If serving cold, refrigerate covered at least 2 hours.
