This soup is inspired by my husbands vegetable soup that he loves to make. I personally never had vegetable soup with ground beef. I usually had it with stew beef chunks or just vegetables. I have to say this is now one of my favorites comfort soups.
It is very easy to make and one of those recipes that you most likely already have all the ingredients in your pantry and fridge. This can be whipped up in a minute and your family will think you have been cooking all day! ?
What ingredient do you need for Hamburger Vegetable Soup?
You will need:
- 1 lb hamburger
- potatoes
- carrots
- celery
- onions
- 1 can green beans
- 1 can sweet corn
- 1 can peas
- 1 64 oz tomato juice
- 24 oz water
- salt, pepper, garlic and onion powder
- Bucks Seasoning Optional
How to Make Hamburger Vegetable Soup
This hamburger vegetable soup could not be easier. Start by browning the ground beef. Add salt, pepper, onion and garlic powder. Cook until no longer pink and drain any excess grease. If you use a lean burger you may be able to skip this step.
Peel potatoes and carrots and dice into small bit size pieces. Chop onion and celery. Add to a pot or stock pot. Add cooked burger, and remaining ingredients. Pour vegetable juice over incredients and combined. You may want to add more salt and pepper to taste. You can also add Bucks Seasoning at this time too. (a few shakes goes a long way)
Bring soup to a rapid boil, lower heat and simmer until carrots and potatoes are tender. Approximately 30-40 minutes.
Can I freeze Hamburger Vegetable Soup?
This soup freezes very well. I recommend using freezer bags as they can be layed flat and therefore taking up less space and allows for them to be stacked.

Ingredients
- 1 lb hamburger
- 4 med potatoes
- 2 large carrots
- 2 stocks celery
- ¼ cup white onions
- ⅛ tsp salt
- ⅛ tsp Pepper
- ⅛ tsp garlic powder
- ⅛ tsp onion
- 1 can green beans
- 1 can sweet corn
- 1 can peas
- 1 64 oz tomato juice
- 24 oz water
Instructions
- In a skillet over medium high heat, brown the ground beef, add salt, pepper, garlic and onion powder. Stirring occasionally, until no longer pink (about 7-8 minutes).
- Drain burger and set aside.
- Peel and dice 4 potatoes
- Peel and dice 2 carrots
- chop 2 celery rib
- Dice ¼ cup of onion
- Add all ingredients to a stock pot.
- Bring to a boil, then reduce to a simmer until potatoes and carrots are tender. Approximately 40 minutes. Add additional salt and pepper to tastse.
Notes
I like to add Bucks Seasoning when I make this recipe. I think it adds so much flavor. They do not sell this at my local grocery store so I would have to have my sister send it to me from NY but now I can get it on Amazon.
