A few years ago I started cooking my vegetables by roasting them in the oven. Once I tried carrots, there was no going back. Drizzle these with Olive Oil, Salt, Pepper, and Thyme and you will have an amazing side dish.
How To Prepare Carrots For Roasting
Sometimes I roast carrots whole and sometimes I cut them up into wedges or rounds. First, you will want to wash your carrots, trim and peel before roasting. Once you have your carrots ready, you will drizzle with Olive Oil and season.
Can I Use Another Type Of Carrot For Roasting
Absolutely! You can use any type of carrot. You can use tri-colored carrots, rainbow carrots, black carrots, or traditional orange carrots. Whatever you desire.
Oven Roasted Carrots. Super Easy and an amazing flavor! You can make these with tri-color carrots, or rainbow carrots, or just traditional orange carrots. The results are the same...delicious!
1½ lbs. tri-color carrots, washed and patted dry
2 T. olive oil
2 t. kosher salt
3 T. fresh thyme stems removed
Pepper to taste
1. Preheat oven to 400°F and line a large, rimmed baking sheet with parchment paper or a Silpat® baking mat.
2. Place carrots on the prepared baking sheet and drizzle with olive oil. Gently toss with your hands to evenly coat carrots with the oil. Sprinkle with salt and fresh thyme leaves. Toss to combine.
3. Place the baking tray in a preheated oven and roast for approximately 15-20 minutes. Remove from the oven and turn each carrot to expose the bottom side. Return to oven and roast another 5-10 minutes or until they start to brown.
4. Remove from oven and serve immediately. Enjoy!
