    Are you trying to eat Paleo or Low-Carb? Have you given up on grains or eat a Vegan diet? Have you been missing bread? Try some sweet potato toast! That's right, I said sweet potato toast. You might be thinking I am crazy but I'm not. This potato toast is sweet and savory and topping ideas are endless.

    How To Make Sweet Potato Toast?

    • Preheat oven to 350℉
    • Wash and dry sweet potatoes.
    • Slice potatoes lengthwise with a sharp knife or mandolin slicer about ¼-1/3 in.
    • Arrange in a single layer on a wire rack on a baking sheet.
    • Bake for 15-20 minutes or until tender. ( do not fully cook)
    • Note: You can use a toaster oven or toaster if you prefer rather than baking in the oven. For the toaster, you will want to run them through at least twice. You want them to cook through and have the toasted look.

    Do you love sweet potatoes? Have you given up bread but still want to eat some toast? Well, this is your answer.  This savory-sweet potato toast is an amazing alternative.  And best of all the topping ideas are unlimited. 


    Ingredients

    1 large sweet potato washed, dried and sliced

    Topping Ideas:

    • Roasted Chickpeas
    • Tomatoes
    • Goat Cheese
    • Avocados
    • Eggs
    • Peanut Butter or Almond Butter
    • Nutella
    • Cream Cheese
    • Cucumbers
    • Red Onions
    • Blueberries
    • Capers 

    Instructions

    1. Preheat oven to 350℉
    2. Wash and dry sweet potatoes.
    3. Slice potatoes lengthwise with a sharp knife or mandolin slicer about ¼-1/3 in.
    4. Arrange in a single layer on a wire rack on a baking sheet.
    5. Bake for 15-20 minutes or until tender
    6. Allow to cool on wire rack
    7. Top with toppings and enjoy!
