    This Texas Caviar is the best. It's delicious, healthy, and so easy to make. Made with beans, corn, avocado, and fresh vegetables. Topped with an amazing red wine vinaigrette and lime juice! Great as a dip or salad.

    What is Texas Caviar Made Of?

    Texas Caviar, also known as Cowboy Caviar, Cowboy Salsa, or Mexican Caviar is a mix between a salad and a dip. It is typically made from fresh vegetables, black beans, black peas with a light and tangy vinaigrette.

    How Long Can You Keep Cowboy Caviar?

    Once prepared, Texas Caviar can be stored in the refrigerator for three to four days. Keep in a sealed container.

    Ingredients Needed To Make Caviar

    This Caviar is made up of fresh vegetables and has an amazing flavor. I love this time of year because our local vegetable stand is open now. There is nothing better than fresh, ripe vegetables.

    Black Beans

    Black Eyed Peas

    Corn

    Cherry Tomatoes

    Red And Green Peppers

    Jalapeno Pepper - Optional. Omit if you do not want it spicy.

    Red Onion

    Avocado

    Cilantro

    Olive Oil, Lime Juice, Red Wine Vinegar, Cumin, Salt and Pepper

    Description

    This Texas Caviar is the best. It's delicious, healthy, and so easy to make.  Made with beans, corn, avocado, and fresh vegetables.  Topped with an amazing red wine vinaigrette and lime juice!  Great as a dip or salad.


    Ingredients

    Scale
    • 1 Can black beans, drained and rinsed
    • 1 Can black-eyed peas, drained and rinsed
    • 1 Can corn, drained
    • 1 red pepper, diced
    • 1 green pepper, diced
    • 1 red onion, diced
    • 1 jalapeño pepper, diced - Optional 
    • 1 Pint cherry tomatoes halved
    • 1 large avocado, diced
    • ½ cup Cilantro, minced 
    • 2 tsp cumin 
    • ¼ tsp ground pepper
    • ¼ cup olive oil
    • ¼ cup lime juice
    • ¼ cup red wine vinegar
    • Salt to taste

     


    Instructions

    Prep - dice vegetables, drain and rinse peas, beans, and corn.  Chop Cilantro.

    Prepare vinaigrette - combined cumin, pepper, salt, red wine vinegar, olive oil, and lime juice.  

    Stir all ingredients together in a large bowl. Pour dressing over the top.  Salt and Pepper to taste.

    ENJOY!
